Neohesperidin Dihydrochalcone (NHDC), also known as New Methyl Hesperidin Dihydrochalcone, is a flavonoid derivative derived from hydrogenated neohesperidin extracted from natural citrus plants, especially bitter oranges. Its chemical name is 1- (4- ((2-O - (6-deoxy-a-L-mannopyranosyl) - β - D-glucopyranosyl) oxy) -2,6-dihydroxyphenyl) -3- (3-hydroxy-4-methoxyphenyl) -1-propanone, a molecular weight of 612.58.

NHDC appears as white or light yellow powder crystals with a melting point of 152-154 ℃. Its solubility in water at 20 ℃ is 0.2g/L, and it can reach 653g/L at 80 ℃. It is relatively stable at a pH value of 2.0 or above at room temperature, and does not hydrolyze to produce free monosaccharides and glycosides. Even under high temperature and acid-base conditions, it exhibits excellent stability.

The sweet taste characteristics of NHDc were discovered by American scholar Hellowitz in 1963. Its sweetness is as high as 1500-1800 times that of sucrose, and its calorie content is extremely low. At the same time, it has a refreshing taste and a long-lasting aftertaste.
